Breakfast is the most important meal of the day. It’s definitely my favorite. When you wake up, your sugar levels are low and breakfast is what gets them back up to kick start your day. Without it, your energy and sugar levels will depreciate which is dangerous for your body.

Furthermore, breakfast provides your body with the necessary nutrients and vitamins which improve your brain health, boosting performance and concentration.

So, you’re in a hurry and you need to whip up a quick breakfast for yourself. Here are some ideas.

scrambled egg salad

Here’s my go-to breakfast egg salad as seen in the picture above.

Prep time: 15 minutes

2 eggs scrambled

1/2 medium-sized Cucumber

1 Small-sized onion

2 Tree tomatoes

2 Tomatoes

Black Pepper for seasoning

I know it doesn’t sound tasty but trust me, it is! Boiled eggs are a great source of protein and Omega-3. They’re also a good source of minerals and vitamins that help in improving your brain health.

Prep time: 10 minutes

1 or 2 boiled eggs (2 max)

Tomato/Cherry tomato

Black Pepper for seasoning

Honey for sweetening.

BAnana oatmeal

Can you tell how much I love fruits? Adding banana takes the oats from tasty to taaaastyyyy. Oats are a great way to start your morning too. They’re nutritious, loaded with fiber which helps with bowel movement.

Prep time: 15 minutes

1 ripe mashed banana

1/2 cup rolled oats

1 cup of milk. I used almond milk.

1/2 tsp cinnamon

Directions: Mix everything in a saucepan and bring to boil then allow it to cook under low heat for 2-3 minutes. Serve and sweeten with honey.

They are a good source of vitamins such as Vitamin C, potassium, fiber and anti-oxidants. Anti-oxidants are great at reducing disease risk. Furthermore, they are quite easy for our bodies to digest and they keep you full for a while. Cut up a few of your favorite fruits, maybe add some natural unsweetened yogurt and enjoy yourself!

PS. Avoid citrus fruits in the morning to prevent acidity.

Have a lovely breakfast and a productive day! xoxo
